Pistachios
Pistachios (Pistacia vera) are a premium tree nut widely used across the food industry for their distinctive flavour, natural green colour, and high nutritional value, including healthy fats, protein, and antioxidants. They are commonly used in snacks, confectionery, bakery products, ice cream, and ingredient formulations, particularly where visual appeal and flavour profile are key.
Pistachios are grown in arid and semi-arid climates with long, hot summers and cool winters. The trees require specific chilling hours and are subject to alternate bearing cycles, where yields can vary significantly between harvest years. Major producing countries include the USA (primarily California), Iran, and Turkey, which together account for the majority of global production and exports.
Post-harvest processing involves hulling shortly after picking, followed by drying to reduce moisture content and preserve quality. Pistachios are then graded by size, shell split, and kernel quality, with further processing including roasting, salting, and shelling where required. Strict controls are maintained throughout processing to manage aflatoxin risk, moisture levels, and overall food safety, ensuring suitability for both retail and industrial applications.
All products are processed under GFSI-certified facilities and meet applicable USDA, EU, and Codex food safety and grading standards.
